A few years ago, there was a lot of hype around a book called The Takeaway Secret: How to cook your favourite fast-food at home which was written by Kenny McGovern. Kenny spent five years testing and tweaking his recipes until he could create exact ‘taste-a-likes’ of all his favourite takeaway foods. It features recipes for foods based on McDonalds, Subway, Chinese and Indian Takeaways, pizza places and chip shops.

I have used the paperback version of this book A LOT and I notice that it is currently available on Kindle for only £1.99, so might buy that version too. Some of my favourite recipes in this book are:

As you can see, I have tried quite a few of the recipes. There are also recipes included for the accompaniments too – for example, pitta bread, pitta salad and the sauces that go with the Doner Kebabs.
My absolute favourite recipe, and those of others I have cooked this for, is the Lamb Doner Kebab. No matter who I make this for, they always ask for the recipe
Today, I am sharing the easy recipe with you, as found in the book, along with my step by step instructions.
1 tsp Plain Flour
1 tsp dried Oregano
½ tsp dried Italian Herbs
½ tsp garlic powder
½ tsp onion powder
¼ tsp cayenne pepper
1 tsp salt
½ tsp black pepper
500g lamb mince
Preheat your oven to 180C/350F/Gas Mark 4.
In a large bowl, combine everything but the mince.
Add in the mince and mix thoroughly, using your hands, for 2-3 minutes. You need to knead the meat until it is well mixed and smooth.
Place the meat in a loaf shape on a baking tray.
Bake in the middle for 1 hour and 20 minutes, turning half way through the cooking time.
Once cooked, remove from oven and cover in foil. Allow to rest for 10 minutes.
Slice the Doner meat as thinly as you can and serve with pitta bread, salad and sauces.
Red Kebab Sauce
The book includes two kebab sauces – a red one and a white one – I have included the red one here:
6 tablespoons tomato ketchup
4 tablespoons water
1 tsp mint sauce
Chilli Powder to taste
Pinch of salt
Just combine all the ingredients and you are ready to go.
That’s all there is to it. It really does taste just like the ‘real’ thing. We haven’t bought a takeaway kebab since first trying this recipe and my Brother, who lives in Australia, loves this recipe. He was always a fan of a Doner Kebab, but since being in Australia had been unable to source a kebab that was anything like the ones here in the UK. Now he doesn’t need to, he just makes his own.
